Icing Weekends: Cookies Worth Giving
Two icing consistencies, one overnight rest: flooded cookies that look professional from your own kitchen.
Royal icing looks fussy, but it forgives beginners beautifully. Flooded cookies need just two consistencies: a stiff outline that holds the border, and a loose flood that settles glass-smooth.
Our test kitchen rules: sift the icing sugar twice, rest the icing ten minutes to pop bubbles, and always decorate the day before you need them — the shine sets overnight.
Start with simple hearts and stars. By your third batch you will be piping roses.
